Taste the Mediterranean diet
Cilento is the home of Mediterranean diet, the nutritional model studied by the American Ancel Keys. In Paestum, for example, you can taste the best mozzarella in all of Campania, awarded the PDO label, and the IGP artichoke, also known as ‘tondo di Paestum’. Other gastronomic delicacies include sun-dried white figs, olive oil, fresh homemade pasta and Menaica anchovy. Anchovies are fished according to an ancient Greek technique: they are washed in brine and placed between layers of Trapani sea salt in small terracotta pots. According to one of traditional Cilento recipes, anchovies are stuffed with goat cheese, garlic, eggs, parsley and chilli pepper. Once ready, they are then fried and cooked in tomato sauce.
