The Amalfi Coast‘s gastronomic tradition is mainly based on seafood dishes. Amalfi ‘s specialtiy is a particular handmade fresh pasta,’scialatielli’, seasoned with exquisite clams. Also worth trying is the minestra maritata, vegetables boiled in chicken broth, pork offal and pork rind. If you go to Furore we recommend ordering squid and potatoes, while in Atrani , don’t miss the ‘Sarchiapone’, made with pumpkin, cheese, minced meat and tomato. In the small village of Cetara, a very famous dish is the colatura di alici, produced by pressing anchovies, which have been first washed and salted. The liquid is then filtered, exposed to the sun. It is finally bottled and used to season spaghetti!
