In the heart of Ragusa Ibla, you will find the kingdom of two-Michelin-starred chef Ciccio Sultano: Ristorante Duomo. Located in a corner next to the Duomo, Ristorante Duomo is the place where history, culture and local gastronomy come together in an apotheosis of traditional and modern flavours, a Baroque cuisine with unlikely combinations, complex and unpredictable links. Pasta is bronze-drawn and local products are genuine, fresh and authentic. Specilities include: Crispy rice clouds with saffron and pepper, Tris of ventresca and local tuna, the Prawn that wanted to be fried, Scampo with prickly pear sauce, Pigeon Prosciutto, Transumanza Marina, Red Mullet in Pisciruovo, homemade Fettuccelle, Linguine, sea urchins and, to finish, the famous cannolo in the Sultano version (i.e. with cow’s ricotta cheese).
